ORIGIN OF NAME:
The name recognizes the unique character of this wine. All fruit has been through an extended maceration of a minimum of 38 days. This slow fermentation process influences and softens tannins also increase phenolic extraction from the skins giving a more mature character to the wine. The process consumes a lot of winery time and that means it is only feasible to make a small production. Shiraz and Cabernet Sauvignon is chosen as the blend for this wine because of its specialness as an Australian coupling. The Shiraz came from Eastern Block and the Cabernet from Home Block. The two oldest plantings in the vineyard. The growing season experienced the most benign weather for some years. Good winter/spring rains and moderate heat throughout a long summer. Bottled February 12 2015 and not released for sale until February 2017 giving it 2 years of bottle development.
